'Peanut, Orange, and Carrot Salad (PICNIC FOODS)'

'Sue Mallick with Food City prepares a peanut, orange, and carrot salad at the Tasteful Creation Cooking School held every Monday Night at Food City Crown Point in Kingsport, TN. Ingredients: 1/4 cup peanut butter, 3 tbsp soy sauce, juice of 1 orange, 1 1-inch piece of ginger, 1 lb bag matchstick carrots, 4 green onions, 1/4 cup peanuts, salt and pepper to taste  Melt peanut butter in microwave bowl, whisk in soy sauce, orange juice and ginger.  Add water if mixture is too thick.  Stir in carrots, green onions and peanuts, toss to coat.  Season with salt and pepper.'
